Spicy Tuna Bowl

Ingredients:

1/2 cup rice (or 1/4 cup dry rice)

1 can tuna (I prefer solid white in water)

1/3 cup pineapple (fresh or frozen)

1 mini cucumber, sliced

1/8 cup shredded carrots

1/4 cup pickled onions

1 tbsp scallions

1 tsp sesame seeds


For the sauce:

1/2 tbsp mayo

1/2 tbsp coconut aminos

1 tsp sriracha

1/8 tsp garlic powder

1/8 tsp ground ginger


Instructions:

  1. Cook rice and allow to cool.

  2. Mix tuna with spicy mayo sauce ingredients.

  3. Assemble bowl with rice, tuna, pineapple, and veggies.

  4. Drizzle on a little extra sriracha, coconut aminos, and sesame seeds.

  5. Enjoy!
