Spicy Tuna Bowl

The easiest high protein bowl and perfect for summer!

Ingredients:
1/2 cup rice (or 1/4 cup dry rice)
1 can tuna (I prefer solid white in water)
1/3 cup pineapple (fresh or frozen)
1 mini cucumber, sliced
1/8 cup shredded carrots
1/4 cup pickled onions
1 tbsp scallions
1 tsp sesame seeds
For the sauce:
1/2 tbsp mayo
1/2 tbsp coconut aminos
1 tsp sriracha
1/8 tsp garlic powder
1/8 tsp ground ginger
Instructions:
Cook rice and allow to cool.
Mix tuna with spicy mayo sauce ingredients.
Assemble bowl with rice, tuna, pineapple, and veggies.
Drizzle on a little extra sriracha, coconut aminos, and sesame seeds.
Enjoy!
