Immunity Boosting Elderberry Chia Pudding

Did you know Elderberry has been used FOREVER for its immunity boosting properties? Last summer in the heat of the pandemic, I ran to Whole Foods to buy Elderberry chews for my boyfriend and I because I did not want covid!!


Sambucol Elderberry Syrup is an easy way to incorporate Elderberry into your diet and boost your immunity! Linking the product here!

Ingredients (for the chia pudding):

2 tbs chia seeds

1 tbs stevia

1/2 scoop of vanilla protein

1 serving of Sambucol Elderberry Sugar Free Syrup (just measure it in the cup that it comes with!)

3/4 cup of plant-based milk of choice - I always use unsweetened almond milk

optional: frozen strawbs


And... your choice of fruit, granola, seeds, nut butters etc for toppings! I used banana, kiwi, and unsweet coconut flakes!


Instructions:

  1. Combine ingredients for chia pudding in a jar, bowl, or plastic container. Mix thoroughly. If you want a more purpley color, heat up a few frozen strawbs, mash them up a little, and stir them in.

  2. Cover and let sit overnight, or for 5-6 hours.

  3. Top with your toppings of choice and enjoy!
